Le makroud (المقروض), également orthographié macroude ou makroudh voire makroute (مقروط) est une pâtisserie préparée en Tunisie et en Algérie, qui a fait la réputation de la ville de Kairouan en particulier. Elle est aujourd'hui répandue dans toute l'Afrique du Nord dans des variantes plus ou moins proches.
Le makroud est préparé en superposant une couche de pâte à base de semoule de blé dur et une couche de pâte de dattes, ou quelquefois de figues ou d'amandes. Le tout est ensuite roulé, puis découpé sous forme de losanges ou de triangles avant la cuisson et le plus souvent frit dans une huile végétale. Le makroud est ensuite trempé dans un sirop mielleux à base de sucre et de citron ou de zestes d'oranges. Il est enfin servi à froid.
Le 20 mai 2008 a lieu le premier festival national du makroud à Kairouan[1].
