L'acide carminique (C22H20O13) est un éther de couleur rouge présent naturellement chez la cochenille. Cet insecte produit l'acide pour se protéger des prédateurs. L'acide carminique est l'agent colorant du carmin.
La première production synthétique d'acide carminique par des chimistes organiciens remonte à 1991.
