Georg Ossian Sars est un zoologiste norvégien, né le 20 avril 1837 à Kind et mort le 9 avril 1927 à Oslo.
Comme son père, Michael Sars (1805-1869), Georg Sars est un biologiste spécialiste de la taxinomie des animaux marins et d'eau douce, en particulier les crustacés (Mysidacés et Ostracodes) et mollusques.
Georg poursuit les recherches de son père sur les variations des captures de morue par les pêcheries du pays mais que la mort avait empêchée de mener à son terme. Georg Sars est considéré comme l’un des premiers scientifiques à avoir étudié la pêche. Il reçoit la médaille linnéenne en 1910.
