Caillette (organe)
L'abomasum ou caillette est le véritable estomac des Ruminantia. Les autres compartiments sont dits pré-estomacs (panse, réticulum, feuillet) car ils assurent une digestion microbienne, la digestion enzymatique étant réalisée dans cet estomac.
Il secrète un acide fort et de nombreuses enzymes digestives et digère les composés de particules alimentaires résiduelles, certains sous-produits de la fermentation bactérienne, et d'une masse microbienne (bactéries, protozoaires) qui a crue et s'est multipliée dans les pré-estomacs.
La caillette doit son nom du fait que chez le ruminant nouveau né, c'est l'organe digestif le plus développé, son alimentation étant essentiellement composée de lait, sa dégradation donnant du lait caillé. Au fur et à mesure que l'alimentation du veau (ou autre petit ruminant) s'appauvrit en lait, la caillette devient proportionnellement moins développée au profit des pré-estomacs du ruminant.
À partir de la caillette, on produit la présure qui sert à la fabrication du fromage.
