L'amer (appelé aussi amère ou bitter) est une liqueur apéritive fabriquée à partir de l'infusion de plantes amères. Certains amers sont des ingrédients dans différents cocktails.

Les plantes les plus couramment utilisées dans l'élaboration de l'amer sont la gentiane amère (Gentianella amarella), l'orange amère ou bigaradier (Citrus aurantium) et la quinquina (Cinchona officinalis).

Les amers ont longtemps été considérés comme possédant des vertus médicinales, et sont toujours considérés comme tels par beaucoup.
