La gaulthérie couchée ou thé des bois (Gaultheria procumbens) est un petit arbuste de moins de 15 cm de la famille des Ericaceae et du genre Gaultheria. Il croît dans les forêts d'Amérique du Nord et de Chine.
Son fruit, communément appelé la « pommette », est comestible lorsque mûri, autour de la "fin août et de la première moitié de septembre":(information erronée) . Les feuilles et les tiges, une fois séchées et infusées, font un thé réputé. Ces baies rouges résistent à l'hiver et contiennent une essence aromatique nommée « wintergreen ». L'huile essentielle issue de cette plante serait un remarquable anti-inflammatoire. Constituée presqu'exclusivement de salicylate de méthyle, elle a une odeur très caractéristique.
