Les Ouzbeks (ethniques) sont un peuple d'Asie centrale parlant une langue turque (l'ouzbek), vivant majoritairement en Ouzbékistan, bien qu'il existe des populations ouzbèkes vivant en Afghanistan, au Tadjikistan, au Turkménistan, au Kazakhstan, en Russie et dans la province chinoise du Xinjiang.

Le terme Ouzbeks s'applique aussi aux citoyens de l'Ouzbékistan dont 80 % de la population sont des Ouzbeks ethniques. Pour éviter les confusions, on peut également appeler les habitants de l'Ouzbékistan les Ouzbékistanais, quelle que soit leur origine, le terme Ouzbek s'associant localement à la seule origine ethnique ouzbek. L'origine ethnique est inscrite dans les passeports de l'Ouzbékistan et dans la plupart de documents d'état civil. D'autres groupes ethniques d'Ouzbékistan sont constitués de Tadjiks, Russes, Tatars, etc.

Les Ouzbeks tirent leur nom d'Özbeg (1282-1341), un khan mongol de la Horde d'Or qui régna de 1312 à 1341. Ce sont leurs parents de la dynastie des Chaybanides, conquérants de l'actuel Ouzbékistan en 1507, qui donnèrent ce nom à leur peuple.

Les Ouzbeks (Wūzībiékè zú en pinyin) font partie des minorités officiellement reconnues en Chine.
