Le Soudjouk ou Soudjour (en turc : sucuk ; en bulgare : суджук ; en serbe/croate/bosniaque : sudžuk/cyџyk ; en arabe : سجق ; en grec : σουτζούκι « soutzouki » ; en kirghiz : чучук ; en kazakh : шұжық ; en arménien : սուջուխ ou երշիկ (erchik)) est une saucisse sèche épicée répandue des Balkans au Moyen-Orient et jusqu'en Asie centrale.
