La réaction du biuret est une réaction mettant en évidence les liaisons peptidiques. La méthode consiste à réaliser un dosage direct par photospectrométrie à 540nm, lié à la formation d'un complexe coloré en mauve entre le Cu2+ et la liaison peptidique de la protéine. Plus les liaisons sont nombreuses, plus l'absorbance est grande.
