Les hyaluronidases (EC 3.2.1.35) sont une classe d'enzymes qui dégradent les acides hyaluroniques
En catalysant l'hydrolyse des acides hyaluroniques, des composants majeurs des liaisons inter-cellulaires, les hyaluronidases abaissent la viscosité des acides hyaluroniques et donc augmentent leurs perméabilités.
Exemple de l'activité hyaluronidase : La protéine PH-20 (située sur la membrane plasmique des spermatozoïdes) possède une activité hyaluronidase, ce qui lui permet de dégrader la matrice extra-cellulaire de la Corona Radiata (d'un follicule), riche en acide hyaluronique.
