Contraction du mot food (nourriture en anglais) et feeling (ressenti en anglais), Fooding, inventé en 1999 par le français Alexandre Cammas, alors journaliste et chroniqueur culinaire à Nova Magazine, est la marque de guides édités en partenariat avec Nova, Libération, et depuis 2007 Le Nouvel Observateur et d'événements gastronomiques tels que La Semaine du Fooding, la Grand Fooding d'été....
L'objectif du Bureau du Fooding est de se défaire des conventions traditionnelles de la cuisine pour donner la possibilité aux chefs de s'émanciper plus librement, selon eux. Il n'exclut aucun courant gastronomique, comme la world food, la fusion food, le easy eating, la street food, la « bistronomie »... Il considère que certains guides ont une vision "étriquée" ou conservatrice.
