Shiga Toxine Escherichia Coli (STEC) est une bactérie responsable des colites hémorragiques et du syndrome hémolytique et urémique. Il s'agit de la nouvelle définition internationale. On l'appelait avant Vera Toxine Escherichia Coli. Il se trouve que ce nom STEC soit approprié puisqu'on la trouve très fréquemment dans les steaks mal cuits en particulier le hamburger.
Shiga fait référence à la toxine Toxinex des shigelles.
