Les granzymes sont une famille de protéines, des sérines protéases. Les granzymes sont un des moyens d'action des cellules immunitaires cytotoxiques (cellule T et NK) pour lyser leur cible. La perforine permet aux granzymes d'entrer dans les cibles, où l'enzyme va dégrader les protéines, et induire la mise en apoptose de la cible.
Une autre enzyme proche, la granulysine, a également été décrite.
