Le chyme (prononcer 'chime' [ʃim]) est la substance liquide que l'on trouve dans l'estomac avant le passage de la valve du pylore et l'entrée du duodénum. Il consiste en de la nourriture partiellement digérée, de l'eau, de l'acide chlorhydrique, et diverses enzymes de la digestion. Le chyme passe lentement par la valve du pylore et dans le duodénum où l'extraction des nutriments commence. En fonction de la quantité et du contenu (acide ou alcalin) du repas, l'estomac digèrera la nourriture en chyme dans une durée comprise entre 40 minutes et quelques heures. Le chyme a une texture proche de celle de la colle.
Étymologie : vient du bas latin médical (IIIe s.) Chymus « suc de l'estomac », emprunté au grec χυμός « suc, humeur ».
