Les Cytases sont des enzymes contenues dans les graines de certaines plantes, leur permettant l'hydrolisation des parois cellulaires.
La cytase a la faculté sous l'effet de l'humidité de dissoudre la membrane de cellulose qui enferme l'amidon[1].
